These omega 3 recipes let you sneak more health into your diet

It's not hard to find omega 3 recipes. If you know omega 3 rich foods, it's a simple matter of combining them in ways that are delicious and don't send picky eaters running for the hills... well, okay, maybe it's not that easy after all.

But fortunately, many omega 3 foods are both delicious and nutritious. If you don't believe me, here are three amazing recipes to get you started.

Star Food Number One: Salmon - Fresh Basil Salmon

Salmon recipes are easy to find, but this one includes fresh basil, another of the omega 3 rich foods you should work into your diet.

Ingredients:
4 salmon steaks
2 tbsp lemon juice
2 tbsp olive oil
2 tbsp fresh basil, chopped

Mix the lemon juice, olive oil, and basil, and brush onto salmon. Grill or bake until fish flakes when tested with a fork.

Star Food Number Two: Flax - 'Fried' Chicken

OK, it's not hard to convince your family to eat salmon recipes -- but flax seed? Sure thing, with this yummy recipe!

Ingredients:
1 egg, beaten
3 tbsp milk
1/2 cup ground flaxseed
1/2 cup crushed crackers
1 tsp paprika
1 tsp cayenne powder
1 tsp garlic powder
Salt and pepper to taste
2 tbsp melted butter
2-3 lbs chicken pieces

Preheat the oven to 350. In a shallow container, combine the egg and milk. In another shallow container, combine all dry ingredients.

Dip the chicken pieces in the egg mixture, then coat with crumbs. Place on a greased baking sheet (don't let pieces touch). Bake 45 minutes or until cooked through -- do not turn during baking.

Star Food Number Three: Grape Leaves - Stuffed Grape Leaves

Love to eat Greek? Fortunately, grape leaves are perfect omega 3 foods.

Ingredients
1 lb ground beef
1/2 cup uncooked rice
1 tsp dry mint
2 tbsp olive oil
1 cup water
2 tbsp tomato paste
1 tsp garlic powder
1 8 oz jar or can of grape leaves

Mix the water, tomato paste, mint, oil, garlic, and rice. Add the meat and mix thoroughly.

Place a generous portion of filling onto each grape leaf and roll tightly. Place each leaf seam down in a large baking pan or Dutch oven. You can layer them on top of each other but don't overfill the pan.

Pour the brine from the jar of grape leaves over the rolled leaves. Add water to cover the leaves and bring the whole thing to a boil. Reduce the heat, cover, and simmer for about 30 minutes before serving -- delicious!

OK, grape leaves are probably something new for your family, but they're so delicious they'll love eating them -- emphasize that they're cool Greek things (or leaves, in some cases) and kids will enjoy them (your husband might be another case...).
